From the US point of view, a child born in the US, and who also holds citizenship of another country through a parent, is allowed to keep both citizenships for life. If in fact your nieces and nephews are both US citizens and Italian citizens, then they will be allowed to keep both citizenships for life. Neither the US nor Italy has a requirement for them to choose only one citizenship.
