Allen,

You probably don't want to change the extension to .doc.  Doing so is not sufficient for word to open and understand what the document is.  Files with the .doc extension are expected to be in a specific (word) format.

You could associate word with .txt files.  This way when you open the file it will automatically open in word and word will recognize that it isn't a word formatted file.
