I can't speak for other mail servers, but the one I've been using for the
past few years (Mdaemon for Win95/98/NT) has an option for encrypting
the file "while" it resides on the server. That at least helps while your
email is "waiting at the bus stop" :) Now of course this option is controlled
by your email administrator so if that's the person your worried about, it
doesn't help much.
