according to my manual there is NO HELV 8 pt Bold that is predefined.
However, you can define your own font at the front of the "ENV" file.
I do this all the time (in fact I seldom use the predefined fonts)

Try this line:
\FONTset s SCALE HELV 8 BOLD

Where 's' is the font identifier you use when you want to invoke this
font.   You can use any letter not already being used
to id a font.

I'm reading this from home so I don't have the hard copy Fantasia
manuals to hand. 

In the manuals there's a list of font numbers and their corresponding
fonts that are precompiled into the fantasia database / account.

So in the example below you would change 

B 16 

To something like 

B 52 

- where 52 is the number for the font you require.  (52 is just a random
number not the actual number you require) 

All we need to do is identify the correct font number.   I'll try and
get back to you in the morning.

I am trying to recall how to identify the fonts used in Fantasia and, as
it has only been 15 years since I last looked at this, my memory is a
little vague.

If anyone here can remember how to to do this please drop me a note.  In
fact. if anyone can remember how one prints out the manual for this
product I would be much obliged if you would remind me how it is done.

To give and example, in a form file I left myself these notes.

\* FONT 354 HELV BOLD 14 PT PORT
\* FONT  16 HELV BOLD 10 PT PORT
\* FONT 349 HELV REG   6 PT PORT
\FONTSET H 354 B 16 T 349

What I am trying to do is to change font B to Helvetia 8 point bold.
