I have done something similar on the 4xxx series. Do a little printer setup
with the front panel buttons, then use esc codes like <esc>&l#H in an env-file
or wherever makes sense. Example "<esc>&l4H" prints from tray 1. Thats an
'ell', not a 'one' after the ampersand.

The list of tray codes as posted by someone from HP a while back is:
0 = prints or ejects current page
1  =    Tray 2
2  =    manual feed, paper
3  =    manual feed, envelope
4  =    Tray 1
5  =    Tray 3
6  =    Envelope Feeder
7  =    auto select
8  =    Tray 4
20-69 = external trays

But I think code "0" actually means "print from any unlocked tray". My stuff
uses codes 4 to print from tray 1 and code 0 to use anything BUT tray 1. All
our laser env files & setup files have one of these codes.

Each tray with special paper probably needs to be marked as special in the
printer's internal configuration, or else things might seem to work at first
but stop working when the tray you want to use is empty. With the following
config changes, things work correctly by my standards -- with only tray 1
special, and trays 2 & 3 interchangeable plain paper, when I tell it to print
tray 1 it will wait to be fed if tray 1 is empty, and if I don't select tray 1
it won't use it even if tray 2 & 3 are empty, but it will switch correctly
between 2 & 3 if one of them is empty.
For special paper in tray 1, use the top panel buttons to go to the paper
handling menu, set tray-1 = cassette; tray-1 size = whatever; tray 1 type =
preprinted or color (or probably anything EXCEPT "plain" -- the choices will
vary by printer model). If trays 2 & 3 are plain paper, set them type =
plain. Each tray with special paper should probably get a different "special"
type, but I haven't tested anything fancier than just tray 1.
This might take a little trial and error -- if anyone has test results for
other trays I would like to know so I can add them to my notes.

This works without any 'tray' commands in npconfig, just what I described
above.
