Good idea.  Good-old vi is much more fun than MPE's built-in
Editor.

I use Reflection for the Mac (v. 4.2.6) and I can run vi quite easily.

Some settings that might be useful for you to check via showvar:

HPSTDIN_ACCESS_TYPE = NS/VT
HPSTDIN_TERMINAL_TYPE = 0 (T_DATA_ENTRY(4))
HPSTDIN_TRANSPORT_TYPE = TCP/IP
HPVT_CLIENT_VENDOR = WRQ_CONNECTION_3000_FOR_MACINTOSH
HPVT_CLIENT_OPSYS = MACINTOSH_OS
HPVT_CLIENT_MODE = MESSAGE_MODE
HPVT_CLIENT_TCP_PORT = 49157
