Tim, we had the same problem.  We are a hospital, so the down time had to be
minimal.

Our solution was to get a "second" system to house our new array
temporarily.  We contacted the vendor we use for hardware support, and for a
modest fee, they let us use another HPe3000 987/200 (yea, I know they are
old, but like Timex they keep on ticking).

1) We did a full backup from our primary system, then started the restore on
the "backup" system.

2) Once the restore was completed and verified, we followed the next day
with a partial/final store our production system (i.e. all files accessed
since the last full backup).

3) Once all files were restored, we powered down both systems, and switched
the new array to our production system.

A couple of gotchas:

1) Check your applications, and be aware of any files that may be created
only for an update then deleted. This could cause some "update" anomalies.

2) Check to insure there are no HPSUSAN issues on the restore, we did not
encounter any, but we were using HP Turbo Store.

3) Watch the firmware version on the your scsi cards, we did not, and
encountered a delay when our production system would not boot up (could not
read the new array).

4) Check your account structure on the new system, we were shifted around
some private volumes.

Our down time was down to a little over 16 hours with this method. If we did
a standard store, restore, we would have been down for days. Our total
system is 125 gigabytes and we had only DDS2 tapes.
