I like "vi".  (Hey, I don't want to hear it!)
pico is very popular. There is a nice screen shot of it here:

Pico is part of the mail package pine, but you can run pico standalone. Since pico is primarly used for editing mail and used by non-system admin types, it is designed to be easy to use. You can download pine from
