This did the trick!  Now two follow up questions.

1.  Why didn't the MAIL_HUB option work?  According to all the sendmail
documentation I felt that it should have.

2.  Now exchange is rejecting all of the mail sent from the 3k.  The mail
hits exchange with the from address of "[log in to unmask]".  Since
manager.sys does not exist on the exchange server the mail is rejected.  Is
there a way to get around this problem without creating a bunch of bogus
users on the exchange server?

We have a similar situation where we forward our e-mail to our exchange
server queue and it then forwards the e-mail on to it's destination. This
line needs to be added to your /etc/sendmail.cf file with the appropriate
information.

# "Smart" relay host (may be null)
DSsmtp:[yourmailserver.domain-name.com]
