Subject: [UTCSTAFF] Recent Health Concerns

I want to take a moment to stop rumors and speculation and report the facts
of a situation that occurred Wednesday evening during a catered event on
campus. During the Southern Conference Softball Tournament Banquet, held in
the Tennessee Room, a small, unidentified foreign object - which MAY BE a
baby field mouse - was discovered at the bottom of a large bowl of spring
salad mix.

The salad was removed immediately and replaced with a fresh bowl.
There are several important points that need to be reported accurately.

o There have been no reports of illness.

o The pre-packaged spring salad mix contained a variety of colored leaves
and was washed by ARAMARK employees prior to serving.

o None of the salad mix in question was served through the regular campus
dining services.

o The Hamilton County Health Department has been notified as well as the
UTC Office of Safety and Risk Management.

o The specimen, which was about the size of a 25 cent coin, has been sent
for testing and analysis.

I want to assure the campus that ARAMARK and UTC are taking all necessary
steps to discover the source of the foreign object and to ensure the safety
of our food services.

ARAMARK corporate officials are also investigating the incident.

We greatly regret this situation and when more information is available, it
will definitely be shared with the campus.
