There is no diphthong here. This is a fairly standard mistake of
English-speakers when pronouncing Spanish words. Oll-bosh should be closer.
Of course a real Maya might disagree. Lose those pesky diphthongs, your
Spanish will sound better immediately. Similar to a German that learns to
say 'what' instead of 'vot'.

Vot, no politics? Can't have that. I wanna know what wonderful things the
Mayas have done for other countries. Apart from starting to reclaim
California, that is.

Mayan word not Spanish thus the diphthong. Probably really more of boish
but  as only  real Mayan would know for sure.

That Mayans have confused the world by coming up with zero in base 20.  That
is their contribution.  That and giving a lot of archaeologists a meaningful
existence. ;)
