Have them call around.  It's already been done, in the UK, I believe.  They
put a bunch of cows in some kind of fancy pen surrounded by pipes to pick up
the methane from their burps and less attractive emissions, measured the
results and came up with some estimate of the impact.  FWIW, the impact was
determined to be pretty significant.  I think someone also tried to continue
the process by attempting to capture the methane as a fuel source.  I don't
think this idea worked out quite as well as the original measurement
concept.
