I have a copy of the manual in my hot little hands. I didn't see any
magic setting for uppercase. The current settings can easily be dumped
to paper using the printer's front-panel keys (replace any labels/forms
with plain-paper first).

Has your customer *ever* seen lowercase on the printer?
Try doing an FCOPY of a small test file to both printers.

Perhaps it has something to do with the printing of the barcodes (I have
very little experience here).
Is the data pure text or is it part of a 'barcode label'? (something
mentioned in the manual)

On the 2930 series printers, a variety of features and functions are selected through SETTINGS, a mode entered by pressing just two keys on the printer's keypad. The process, with all the options, is too extensive to be covered in this document. Refer to Section 2 of the Owner's manual for detailed instructions that match the configuration needed for your use.
