I don't know about Meto/Datamax, but with Zebra, it could be how they 
have designed
it. Zebra printers use proprietary coding, called ZPL (Zebra 
Programming Language)
to print labels. Meanwhile, if the printer receives anything that 
doesn't look like ZPL,
it just ignores it and doesn't trouble you about it either. So the 
label coding goes
through and produces labels. Works really well over a Jetdirect box.
My NPCONFIG entry looks like:

1055 (network_address = 192.168.1.155   # Zebra via JetDirect
         setup_file = LPDUMB.VSBCMD.SYS
         data_timeout = 30
         pjl_supported = FALSE
         jam_recovery = FALSE)

The LPDUMB just does an Escape-E to reset the printer. Don't remember why
I did that, but it works.
