For plain old utilization, MRTG is the way to go.
For better details, is IPAudit/(Web)-IPAudit available on sourceforge.net.
For more details still, buy lots of RAM and try NTOP.

IPAudit and NTOP require passive, permissive interfaces (2 Nics).
MRTG has no special needs other than SNMP queries.

NTOP is excellent but doesn't scale very well in our volatile environment.
