The reason Jews begin the Sabbath observation at sunset on Friday is
because the Hebrew calendar is lunar, not solar.  The effect is that
each "day" begins with the disappearance of the sun.

Incidentally, because of its inherent inaccuracy, the lunar Hebrew
calendar is quite bizarre.  While the standard calendar requires leap
days and seconds, the Hebrew calendar requires a periodic leap month!
