I don't understand exactly what you're asking here.

But I do understand the problem you describe _here_.

You always want to use a valid From: address for this very problem.  People
will reply even though the message says not to, and you may also experience
bounces that generate replies.

The sendmail client will let you forge your From: address to something valid by
using the -f option (or is it -F?; I can't remember).

Unless you're a spammer ;-), you always want to use a valid From: header.  But
it doesn't have to be for a user on the same machine that originated the
message.
