Any time you see a math puzzle which involves adding up the digits, they are 
using the "casting nines" method of calculating the remainder after dividing 
by nine. Subtracting this number from your original number will always give 
you a number that is divisible by nine, and all of those numbers will have 
the same symbol.

To make it less obvious, they change the symbols every time you visit the 
site. Otherwise you would clue in that whatever number you choose comes up 
with the same symbol.
