Actually you could boot the entire machine from a SAN. This would
obviate the need to do something like Mirror/UX or another RAID setup
for your boot disk. Certainly, /opt /home and /tmp can be moved off
the system disk. All that really needs to be on a boot device is
/stand, /sbin, /dev, /etc, and a bit of swap.

Those rules are always "rules of thumb", meaning they may or may not
apply. /dev is required at boot time, before filesystems can be
mounted, so I wouldn't ever try that one. There's not a lot of upside
I've seen to moving those others into their own mount point. Even if
you just have large number of small disks, you can still create a
single volume group out of them with LVM.
