starting the transition process....

We are finally starting a transition plan - have selected an ERP vendor. We are trying to get a handle on the data conversion process, and started thinking about dumping data using SQL connections.
One option might be to use ISQL to extract complete sets, but in a tab separated flat file would be a safe way to move data.  Alternatively, use a pc ODBC connection - but don't currently have any utilities that can do this - ??

Does anybody have any experiences they might share in this area please?
