Some asked me about Jamaican Pepper in the recipe. Jamaica was already a
great source of produce and spices during the 18th century. The first
written recipe for haggis actually appeared in the same year as Burns' poem.


Though, I am sure that haggis predated the "discovery" of the new world,
additions to "traditional recipes" occur. Europeans knew of pepper from
India and Africa and may have used those before Jamaican Pepper was
available. They may not have used pepper at all and only later realized that
pepper enhanced the dish.

Since Jamaican pepper is hot it could be swapped for other peppers in the
spice rack. This is the first case of hot swappable Jamaicas. ;-)
