To "recompile" from an .mc sendmail "source" file, you'll need to use 
the "/SENDMAIL/CURRENT/bin/m4" command, but .....

For a simple change like you're considering, you can simply modify 
the "sendmail.cf" file in place, using vi or your favorite 
posix-aware editor (it would be the line containing:

# "Smart" relay host
DSmy.relay.host.name

and re-starting the sendmail daemon job.
