Actually, the Trappists are an order, not a vow. The order is an offshoot
of the Cistercian order (more info at
http://www.newadvent.org/cathen/15024a.htm) which does, in fact, practice
strict (if not total) silence.
As for the word describing an order which has taken a vow of silence, you've
got me beat. The closest I can come is the word "cloistered" which has
nothing to do with silence, but means "secluded from the world in or as if
in a cloister" (http://www.m-w.com).
