Instead of addressing your mail to [log in to unmask], sendmail will
also let you address it with an IP address, i.e. markb@[159.115.1.5].

How about adding a special MX record to your DNS that just points to the one
specific server you're interested in?
Or instead of addressing your e-mail to [log in to unmask], try using
[log in to unmask]

You should be able to do what you're asking with Sendmail. Quoting really,
REALLY briefly from /SENDMAIL/PUB/sendmail-8.9.1-m/cf/README:
: If you want all outgoing mail to go to a central relay site, define
: SMART_HOST as well. Briefly:

: LOCAL_RELAY applies to unqualified names (e.g., "eric").
: MAIL_HUB applies to names qualified with the name of the
: local host (e.g., "[log in to unmask]").
: SMART_HOST applies to names qualified with other hosts.
Sendmail can do just about anything. The hard part is figuring out how. ;-)
